  • 3 c. self-rising flour
  • 1 1/2 tsp. cinnamon
  • 3 eggs
  • 1 1/2 c. Wesson oil
  • 1 1/2 tsp. vanilla
  • 2 c. sugar
  • 1 1/2 c. grated carrots
  • 1 c. crushed pineapple
  • 1 c. shredded coconut
  • 1 c. chopped pecans, mixed with 1/2 c. chopped walnuts (save enough to sprinkle on top of icing, optional)
