Ingredients

  • 2 c. flour
  • 2 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 3 c. finely shredded carrots
  • 1 c. cooking oil
  • 4 eggs
  • 1/2 c. chopped walnuts
  • 1/2 c. chopped dates
  • rind of 1/2 orange

Directions

    Mix all ingredients together.

    Stir well.

    Pour into greased and floured Bundt pan.

    Cook at 350° for 50 to 60 minutes or until inserted toothpick comes out clean.

    Let cool completely before removing from Bundt pan to avoid sticking.

    Let cool on rack and decorate with cream cheese frosting.
