- 1 1/2 c. vegetable oil
- 2 c. sugar
- 4 eggs
- 2 c. plain flour
- 1 tsp. salt
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 3 c. carrots, finely shredded
- 1 c. chopped pecans
Directions

1In a large mixing bowl, combine oil and sugar.

2Add slightly beaten eggs and blend well.

3Stir in flour, salt, baking soda, baking powder and cinnamon.

4Beat several times and add to mixture alternately with finely shredded carrots.

5Pour batter into 3 lightly greased and floured layer pans.

6Bake at 325° for 20 to 30 minutes.

7Cool completely and frost with Cream Cheese Frosting. Sprinkle chopped pecans between layers and top.
