  • 2 c. brown sugar, firmly packed
  • 1 tsp. salt
  • 4 large eggs
  • 2 tsp. cinnamon
  • 1 1/2 c. oil
  • 3 c. grated carrots
  • 2 c. all-purpose flour
  • 2 tsp. baking soda
  • 1/2 c. chopped nuts

Directions

    In large mixing bowl, combine brown sugar, salt, eggs, cinnamon, oil and carrots.

    Beat at medium speed for 2 minutes; blend in flour, baking soda and nuts, mixing well.

    Pour into greased and floured 10-inch (12 cup) Bundt or tube pan.

    Preheat oven to 350°.

    Bake 45 minutes until a toothpick inserted in cake center comes out clean.

    Let cool for 10 minutes.
