- 2 lb. carrots
- 2 eggs
- 1 c. sugar
- 1 c. milk
- 2 tsp. vanilla
- nutmeg
- miniature marshmallows
Directions

1Cook carrots whole, then remove peelings.

2Mix all of ingredients, except marshmallows, in blender.

3Bake for 1 hour at 325°.

4The last few minutes, add the miniature marshmallows and let melt.
