- 12 carrots, peeled and sliced
- 1 small onion, sliced
- 1/4 c. flour
- 1/4 c. margarine
- 1/4 tsp. tarragon
- 1/4 tsp. dry mustard
- 1/4 tsp. pepper
- 2 c. milk
- 1 c. sharp Cheddar cheese, shredded
- 2 c. fresh buttered bread crumbs
- 1 tsp. salt
Directions

1Cook carrots until tender; add the onion and cook 3 more minutes.

2Drain and set aside in a casserole dish.

3Make a cream sauce of the flour, margarine, tarragon, salt, mustard and pepper with milk.

4Stir and heat until thick, then add cheese.

5Mix in until melted.

6Pour cream sauce over carrots in casserole; top with bread crumbs.

7Bake at 350° for 30 minutes.
