  • 1 small onion, minced
  • 1/4 c. melted butter
  • 1/4 c. flour
  • 1 tsp. seasoned salt
  • 1/4 tsp. seasoned pepper
  • 1 c. milk
  • 1 c. half and half
  • 4 c. diagonally sliced, scraped carrots, cooked and drained
  • 6 slices American cheese
  • 2 c. buttered fresh bread crumbs

Directions

    Saute onion in melted butter.

    Stir in flour, seasoned salt and pepper.

    Gradually add milk and half and half, stirring constantly.

    Arrange a layer of carrots in a 2-quart casserole; place 3 slices of cheese over carrots.

    Repeat layers and pour sauce over all.

    Top with bread crumbs and bake at 350°, uncovered, for 25 to 30 minutes.
