- 2 lb. carrots
- 1 medium onion
- 2 1/2 to 3 1/2 c. Ritz cracker crumbs
- 1 1/2 to 2 sticks melted butter
- 1 to 1 1/4 bars Cracker Barrel cheese, grated
Directions

1Cook carrots.

2While boiling carrots, mince onion and make cracker crumbs.

3Melt butter.

4Mash carrots; save some of the juice, about 1 1/2 to 2 cups.

5Mix all of the ingredients and the grated cheese together. Juice should be added, 1/2 cup at a time, to moisten.

6Bake at 350° for 20 minutes. Sprinkle dried parsley on top.
