- 3 lb. carrots
- about 38 Ritz crackers
- 1 1/2 sticks butter
- 1 c. (8 oz.) Velveeta cheese
- 1 c. water
Directions

1Peel and chop carrots.

2Add water and cook in microwave 30 minutes.

3Drain and set aside.

4Melt 1/2 stick butter and Velveeta until melted.

5Pour over carrots.

6Melt 1 stick butter; set aside. Crush crackers and mix with butter.

7Pat over carrots, like a crust.

8Bake at 350° uncovered for 10 minutes.
