- 1 lb. fresh baby carrots
- 1 Tbsp. horseradish (can add as much as 4 Tbsp. depending on your taste)
- 1 Tbsp. minced onion
- 1/2 c. melted margarine
- parsley
- cracker crumbs (Ritz) for topping
- paprika
Directions

1Cook carrots (not too hard) and save 1/4 cup carrot liquid. Place carrots in a casserole dish.

2Mix together carrot liquid, onion, margarine and horseradish.

3Pour mixture over carrots. Stir fresh parsley through carrots and mix all together.

4Saute cracker crumbs lightly.

5Top carrots with cracker crumbs. Sprinkle with paprika.

6Cook at 350° for 1/2 hour.

7Do not cover.
