  • 1 lb. fresh baby carrots
  • 1 Tbsp. horseradish (can add as much as 4 Tbsp. depending on your taste)
  • 1 Tbsp. minced onion
  • 1/2 c. melted margarine
  • parsley
  • cracker crumbs (Ritz) for topping
  • paprika

Directions

    Cook carrots (not too hard) and save 1/4 cup carrot liquid. Place carrots in a casserole dish.

    Mix together carrot liquid, onion, margarine and horseradish.

    Pour mixture over carrots. Stir fresh parsley through carrots and mix all together.

    Saute cracker crumbs lightly.

    Top carrots with cracker crumbs. Sprinkle with paprika.

    Cook at 350° for 1/2 hour.

    Do not cover.
