Ingredients

  • 1/2 c. sugar
  • 1 c. brown sugar, up to 2 c. max
  • 2 1/2 to 3 c. flour (1 1/2 c. white, 1 1/2 c. wheat)
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. salt or non salt substitutes
  • 3 Tbsp. milk
  • 1 c. nut pieces (optional) my favorite is pecan chips
  • 3 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1 c. minced raisins
  • 4 eggs
  • 1 1/2 c. canola oil
  • 2 tsp. vanilla
  • 3 to 4 c. grated carrots
  • 1/2 c. crushed pineapple (optional)

Directions

    In a bowl mix sugar, brown sugar, flours, baking soda, baking powder, salt or substitute, cinnamon, allspice, nutmeg, cloves and reserve.

    In a blender/food processor mince raisins then add to processor the canola oil, eggs, vanilla and milk.

    Blend at pulse to smooth.

    Combine that mix to grated carrots, pineapple and nut pieces.

    Mix until blended.

    Divide into 3 greased and floured 8 inch or 9 inch round pans.

    Bake at 325° for 40 to 70 minutes until knife inserted in middle comes out without any moisture.
