- 1 lb. carrots, pared and cut into 1/4-inch coins
- 1/2 c. melted butter
- 2 c. shredded Cheddar cheese
- 1/2 c. half and half
- 3 beaten eggs
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Cook carrots until tender; drain.

2Place the carrots into 8 x 10-inch buttered baking dish.

3Combine remaining ingredients and pour over the carrots.

4Bake for 45 minutes or until hot and puffy.

5Cut into squares to serve.
