- 2 1/2 c. flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3 beaten eggs
- 1/2 c. cooking oil
- 1/2 c. milk
- 2 c. shredded carrots
- 1 1/3 c. coconut
- 1/2 to 1 c. chopped nuts
Directions

1Preheat oven to 350°.

2In large bowl, sift together first 6 ingredients.

3Combine separately and add the next 3 ingredients. Stir just until dry ingredients are moistened.

4Stir in last 3 ingredients.

5Turn into 4 well-greased and floured 16 ounce fruit or vegetable cans or 2 (9-inch) bread pans.

6Bake 45 to 50 minutes.

7Remove from cans and cool thoroughly.

8Wrap and refrigerate overnight or until used.
