- 2/3 c. salad oil or less
- 1 c. sugar or less
- 2 whole eggs
- 1 c. self-rising corn meal
- 1/2 c. self-rising flour
- 1 tsp. cinnamon
- 1 1/2 c. grated carrots
- 1/2 c. pecans, chopped
Directions

1Mix corn meal, flour, cinnamon and sugar together.

2Beat eggs well and add oil.

3Add to dry mixture and mix well.

4Stir in carrots and pecans.

5Bake at 350° until golden brown (about 45 minutes or more).
