Carrot Drumsticks

Ingredients

  • 1 (1 lb.) bunch carrots
  • 1/2 green or red pepper (sweet)
  • 1 small onion
  • 2 c. soft bread crumbs
  • 1 egg
  • 1/2 c. chopped celery
  • salt and pepper to taste
  • 1 c. dry breadcrumbs (to coat)

Directions

    Cook carrots and mash.

    Add chopped pepper, minced onion, soft breadcrumbs, egg, chopped celery and salt and pepper.

    Mix together and form into oval shaped patties.

    Roll in dry breadcrumbs.

    Fry in large frying pan with small amount of vegetable oil.

    This was a World War II meat substitute dish my mother made.

    We ate them with catsup.
