Ingredients

  • Two Bunches carrots, small sized, approx 6 inches long without stems. Preferabley mixed colors, orange purple white.
  • 1 tbsp. olive oil
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp garam masala
  • 1/8 tsp cinnamon

Directions

    cut bushy part of carrots off, with a bit of green stem still attached. Wash and dry thouroughly.

    spread on a large sheet pan, drizzle olive oil, then sprinke remaining ingredients. With clean hands, mix till carrots are coated and seasoning is evenly distributed.

    Roast in a 425 preheated oven about 20 minutes. Great with lamb.
