Carrot Lemon Bread

- 1/2 medium size lemon
- 3 extra large eggs
- 1 c. vegetable oil
- 1 3/4 c. granulated sugar
- 2 c. shredded carrots
- 3 c. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 tsp. baking soda
Directions

1Grind lemon (peel and pulp) with meat chopper or blender. Beat eggs in mixing bowl.

2Add oil and sugar. Mix well.

3Add carrots and lemon and blend.

4Sift together dry ingredients.

5Add to liquid ingredients and lightly blend.

6P our into 2 greased loaf pans and bake at 350° for 45 to 50 minutes or until a cake tester inserted into the center comes out clean.
