- 1 1/2 c. sugar
- 1 c. oil
- 4 eggs, beaten
- 3 c. flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 c. grated carrots
- 1/2 c. chopped nuts
- 1/2 c. raisins
Directions

1Preheat oven to 350°.

2Grease muffin tins or prepare paper liners.

3Beat sugar and oil in medium bowl.

4Blend in eggs.

5Sift flour, baking powder, baking soda and salt in another bowl. Gradually stir dry ingredients into oil mixture, blend well.

6Fold in carrots, nuts and raisins.

7Spoon batter into tin to 2/3 full. Bake until tester inserted in center of muffins comes out clean, 30 to 35 minutes.
