  • 1 1/2 c. sugar
  • 1 c. oil
  • 4 eggs, beaten
  • 3 c. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. grated carrots
  • 1/2 c. chopped nuts
  • 1/2 c. raisins

    Preheat oven to 350°.

    Grease muffin tins or prepare paper liners.

    Beat sugar and oil in medium bowl.
  4. 4
    Blend in eggs.

    Sift flour, baking powder, baking soda and salt in another bowl. Gradually stir dry ingredients into oil mixture, blend well.

    Fold in carrots, nuts and raisins.

    Spoon batter into tin to 2/3 full. Bake until tester inserted in center of muffins comes out clean, 30 to 35 minutes.
