- 4 c. flour
- 4 c. sugar
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 6 c. finely shredded carrots
- 2 c. cooking oil
- 8 eggs
- 2 (8 oz.) crushed pineapple (undrained)
- 1 c. coconut
Directions

1In a bowl, combine the flour, sugar, baking powder, baking soda and cinnamon.

2Add carrots, cooking oil and eggs.

3Beat with an electric mixer until combined.

4Pour into large muffin pan, be sure it is greased and floured.

5Bake in a 350° oven for 30 to 40 minutes or until done.

6Makes 24 large muffins.
