- 12 cup butter
- 34 cup brown sugar
- 1 egg
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 12 teaspoon ground ginger
- 12 teaspoon salt
- 1 cup grated carrot
- 1 teaspoon vanilla
- 13 cup raisins
- 12 cup walnuts, chopped
Directions

1Preheat oven to 350.

2Melt the butter, and blend with sugar in a medium mixing bowl.

4Combine the dry ingredients, and mix into the butter mixture.

5Stir in grated carrots, vanilla and rasins.

6Spoon into a buttered 8x8 pan.

7Sprinkle with nuts.

8Bake for 25-20 minutes.
