  • 12 cup butter
  • 34 cup brown sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 12 teaspoon ground ginger
  • 12 teaspoon salt
  • 1 cup grated carrot
  • 1 teaspoon vanilla
  • 13 cup raisins
  • 12 cup walnuts, chopped

    Preheat oven to 350.

    Melt the butter, and blend with sugar in a medium mixing bowl.

    Beat in the egg.

    Combine the dry ingredients, and mix into the butter mixture.

    Stir in grated carrots, vanilla and rasins.

    Spoon into a buttered 8x8 pan.

    Sprinkle with nuts.
