- 1 c. finely grated carrots
- 3/4 c. uncooked instant rice
- 2/3 c. shredded Cheddar cheese
- 1/4 c. chopped onion
- 1/2 tsp. dried basil
- 1 1/2 c. milk
- 1/2 tsp. salt
- 3/4 c. buttermilk baking mix
- 3 eggs
Directions

1Mix carrots, rice, cheese, onion and basil.

2Spread in plate. Beat remaining ingredients until smooth, 15 seconds in blender or 1 minute with beater.

3Pour into plate (pie).

4Bake until knife inserted comes clean, 30 to 35 minutes at 400°.
