- 1 (1 lb.) can carrots
- 2/3 c. sugar
- 1/2 tsp. salt
- 1 tsp. pumpkin pie spice
- 2 eggs
- 1 Tbsp. butter, melted
- 1 c. evaporated milk (undiluted)
- 1 (8-inch) unbaked pie shell
Directions

1Drain the carrots and put through sieve.

2There should be a generous cup.

3Combine with sugar, salt and spice.

4Add beaten eggs, milk and butter.

5Pour into pie shell and bake at 350° for 35 minutes or until knife inserted in center comes out clean.
