  • 1 (1 lb.) can carrots
  • 2/3 c. sugar
  • 1/2 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 2 eggs
  • 1 Tbsp. butter, melted
  • 1 c. evaporated milk (undiluted)
  • 1 (8-inch) unbaked pie shell

Directions

    Drain the carrots and put through sieve.

    There should be a generous cup.

    Combine with sugar, salt and spice.

    Add beaten eggs, milk and butter.

    Pour into pie shell and bake at 350° for 35 minutes or until knife inserted in center comes out clean.
