- 2 c. cooked carrots, pureed
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 3/4 c. evaporated milk
- 1 (9-inch) unbaked pie shell
- 3 eggs, slightly beaten
- 1/3 tsp. ground nutmeg
- 1/8 tsp. ground cloves
- 1 c. honey
- whipped cream or Cool Whip
Directions

1Combine carrots, eggs, salt and spices.

2Mix well.

3Add milk and honey, blending until smooth.

4Pour filling into pie shell. Bake at 400° for 40 to 45 minutes.

5Allow pie to cool.

6Garnish with whipped cream or Cool Whip before serving.

7Makes 1 (9-inch) pie.
