  • 2 c. cooked carrots, pureed
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 3/4 c. evaporated milk
  • 1 (9-inch) unbaked pie shell
  • 3 eggs, slightly beaten
  • 1/3 tsp. ground nutmeg
  • 1/8 tsp. ground cloves
  • 1 c. honey
  • whipped cream or Cool Whip

    Combine carrots, eggs, salt and spices.

    Mix well.

    Add milk and honey, blending until smooth.

    Pour filling into pie shell. Bake at 400° for 40 to 45 minutes.

    Allow pie to cool.

    Garnish with whipped cream or Cool Whip before serving.
