Ingredients

  • 1 1/2 c. cooked, mashed carrots
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 1/2 to 1 tsp. ginger
  • 1 to 1 1/4 tsp. nutmeg
  • 1/4 to 1 tsp. cloves
  • 3 slightly beaten eggs
  • 1 1/2 c. milk
  • 1 (6 oz.) can evaporated milk (3/4 c.)

Directions

    Thoroughly combine carrots, sugar, salt and spices.

    Add eggs, milk and evaporated milk and blend.

    Pour into unbaked pie shells. Bake in very hot oven at 450° for 10 minutes, then in 325° oven about 45 minutes or until mixture does not adhere to knife.

    Cool and top with whipped cream to serve.
