- 1 1/2 c. cooked, mashed carrots
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/2 to 1 tsp. ginger
- 1 to 1 1/4 tsp. nutmeg
- 1/4 to 1 tsp. cloves
- 3 slightly beaten eggs
- 1 1/2 c. milk
- 1 (6 oz.) can evaporated milk (3/4 c.)
Directions

1Thoroughly combine carrots, sugar, salt and spices.

2Add eggs, milk and evaporated milk and blend.

3Pour into unbaked pie shells. Bake in very hot oven at 450° for 10 minutes, then in 325° oven about 45 minutes or until mixture does not adhere to knife.

4Cool and top with whipped cream to serve.
