- 1 Tbsp. cornstarch
- 2 eggs, beaten
- 2/3 c. milk
- 1 1/2 c. cooked carrots, mashed
- 1 tsp. vanilla
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. salt
Directions

1Combine sugar, cornstarch, beaten eggs, milk, salt, carrots, vanilla and spices.

2Mix thoroughly.

3Pour into 9-inch pie crust. Bake for 45 minutes or until firm in a 375° oven.
