  • 1 Tbsp. cornstarch
  • 2 eggs, beaten
  • 2/3 c. milk
  • 1 1/2 c. cooked carrots, mashed
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt

Directions

    Combine sugar, cornstarch, beaten eggs, milk, salt, carrots, vanilla and spices.

    Pour into 9-inch pie crust. Bake for 45 minutes or until firm in a 375° oven.
