- 3 c. flour
- 2 tsp. soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. sugar
- 1 1/2 c. salad oil
- 2 c. finely grated carrots
- 1 (8 1/4 oz.) can crushed pineapple
- 2 tsp. vanilla
- 1 1/2 c. chopped nuts
- 3 eggs
Directions

1Preheat oven to 350°.

2Grease and flour 10-inch tube pan. Sift flour with soda, cinnamon and salt.

3In large bowl of electric mixer, combine sugar and salad oil.

4Add half of the flour mixture; mix well.

5Beat in carrots, pineapple, vanilla and nuts.

6Add remaining flour mixture; beat well.

7Add eggs, one at a time, beating well after each addition.

8Pour into prepared pan; bake for 60 to 70 minutes.

9Makes 16 servings.
