- 1 1/2 c. all-purpose flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2/3 c. oil
- 2 eggs
- 1 c. finely shredded raw carrots
- 1/2 c. crushed pineapple with syrup
- 1 tsp. vanilla
Directions

1In a large bowl, stir together dry ingredients.

2Add oil, eggs, carrots, pineapple and vanilla.

3Mix until all ingredients are moistened.

4Beat with electric mixer 2 minutes at medium speed.

5Bake at 350° for 35 minutes in 2 (9 x 9 x 2-inch) pans.
