Carrot-Pineapple Muffins

  • 1 c. whole wheat flour
  • 1/2 c. all-purpose flour
  • 1/2 c. brown sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 2 Tbsp. oil
  • 1 egg
  • 1/4 c. skim milk
  • 1 c. grated carrot
  • 1 (8 oz.) can crushed pineapple

Directions

    Mix together flours, sugar, baking powder, baking soda and seasonings.

    In a separate bowl, mix oil, egg, milk, carrots and pineapple with juice.

    Pour into flour mixture; combine until ingredients are just moistened.

    Spoon into muffin pans that have been sprayed with cooking spray.

    Bake in a 350° oven for 20 to 25 minutes.
