- 1 c. whole wheat flour
- 1/2 c. all-purpose flour
- 1/2 c. brown sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. nutmeg
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 2 Tbsp. oil
- 1 egg
- 1/4 c. skim milk
- 1 c. grated carrot
- 1 (8 oz.) can crushed pineapple
Directions

1Mix together flours, sugar, baking powder, baking soda and seasonings.

2In a separate bowl, mix oil, egg, milk, carrots and pineapple with juice.

3Pour into flour mixture; combine until ingredients are just moistened.

4Spoon into muffin pans that have been sprayed with cooking spray.

5Bake in a 350° oven for 20 to 25 minutes.

6Yields 12 muffins.
