- 3/4 c. raisins
- 1/4 c. orange juice
- 3/4 c. brown sugar
- 1 cube butter
- 2 eggs
- 1 c. finely shredded carrots
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
Directions

1Soak raisins in orange juice; set aside.

2Cream sugar and butter; beat in eggs.

3Stir in carrots.

4Combine flour, baking powder and baking soda, then all spices and salt.

5Add 1/2 of the flour mixture to carrot mixture.

6Stir in raisins, then remaining flour and mix well.

7Spoon into greased and floured 5-cup mold. Bake at 325° for 50 to 60 minutes.
