  • 2 lb. carrots, peeled and grated
  • 1 stick butter
  • juice of 1/2 lemon
  • 3/4 c. sugar
  • ground ginger, salt and black pepper
  • 1 1/2 c. heavy cream

    Preheat oven to 350°.

    In a saucepan, combine the carrots, butter, lemon juice, salt, sugar and a dash of ginger.

    Add just enough water to cover.

    Bring to a boil; reduce the heat.

    Cover and simmer for 30 minutes or until liquid evaporates.
