- 2 lb. carrots, peeled and grated
- 1 stick butter
- juice of 1/2 lemon
- 3/4 c. sugar
- ground ginger, salt and black pepper
- 1 1/2 c. heavy cream
Directions

1Preheat oven to 350°.

2In a saucepan, combine the carrots, butter, lemon juice, salt, sugar and a dash of ginger.

3Add just enough water to cover.

4Bring to a boil; reduce the heat.

5Cover and simmer for 30 minutes or until liquid evaporates.
