  • 1/3 c. heavy cream
  • 1 lb. carrots, shredded
  • 1/3 c. raisins
  • 1 (8 oz.) can pineapple tidbits or crushed pineapple (packed in natural juice)
  • 3 Tbsp. sugar
  • 1/3 c. mayonnaise

Directions

    In small bowl, with electric mixer on high, beat cream until stiff peaks form; set aside.

    In large bowl, combine remaining ingredients; toss to blend.

    Fold in whipped cream.

    Serve immediately or cover and chill to serve later.
