  • 1 lb. carrots, peeled and sliced
  • 1/2 c. melted butter
  • 3 eggs
  • 1 c. sugar
  • 3 Tbsp. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract

Directions

    Cook carrots in small amount of water until tender, then drain. Combine carrots and butter in container of electric blender. Blend until smooth. Add remaining ingredients. Blend well. Spoon mixture into a lightly greased 1 or 1 1/2-quart casserole dish. Bake at 350° for 45 minutes. Yield: 6 servings.
