- 1 12 lbs carrots, peeled and sliced
- 12 cup butter
- 3 eggs
- 14 cup all-purpose flour
- 1 12 teaspoons baking powder
- 1 cup sugar
- 14 teaspoon cinnamon, ground
Directions

1Preheat oven to 350 degrees.

2Lightly grease a 1 1/2 quart souffle dish; set aside.

3Cook carrots in boiling water to cover for 15 minutes or until tender; drain.

4In the work bowl of a food processor, combine carrots, butter, eggs, flour, baking powder, sugar and cinnamon an dprocess until smooth, stopping once to scrape down the sides.

5Spoon into prepared dish.

6Bake about 1 hour or until lighlty browned.

7Serve immediately.
