  • 1 lb. carrots, cooked
  • 1 stick margarine
  • 1/3 c. sugar
  • 3 eggs
  • 2 Tbsp. flour
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • dash of cinnamon

Directions

    Put hot carrots into blender or food processor.

    While mixing, add margarine, eggs, flour, vanilla, cinnamon, sugar and baking powder.

    Put into a 2-quart casserole dish and bake for 1 hour at 350°.
