- 1 lb peeled carrot
- 12 cup sugar
- 14 tablespoon baking powder
- 12 tablespoon vanilla
- 1 tablespoon flour
- 2 eggs
- 1 tablespoon margarine
- powdered sugar
Directions

1Steam or boil carrots until extra soft.

2Drain well.

3While carrots are warm, add sugar, baking powder, and vanilla.

4Whip with mixer until smooth.

5Add flour and mix well.

6Whip eggs and add to flour mixture; blend well.

7Add softened margarine to mixture and blend well.

8Pour mixture into baking dish about half full as the souffle will rise.

9Bake in 350F oven about 1 hour or until top is a light golden brown.

10Sprinkle lightly with powdered sugar over top before serving.
