- 2 tablespoons butter
- 1 clove garlic, minced
- 1 medium onion, finely chopped
- 2 12 cups chopped carrots
- 2 mcintosh apples, peeled,cored and chopped
- 2 celery ribs, chopped
- 12 cup long grain rice
- 2 tablespoons chicken bouillon
- parsley (optional)
- salt (optional)
- 4 cups water
Directions

1Melt butter in a pan, saute onion, celery and garlic until tender.

2Add water, bouillon, carrots, rice, and apple.

3Bring to a boil.

4Cover and simmer for 25 minutes or until carrots are tender.

5Blend in blender.

6Add salt and parsley to taste.
