- 10 oz. cooked, cubed chicken
- 2 1/2 tsp. soy sauce
- 1/2 c. chopped onion
- 1/4 c. mushrooms
- 3 oz. sliced water chestnuts (reserve 1/4 c. liquid)
- 1 1/2 tsp. cornstarch
- 1 Tbsp. oil
- 1 oz. cashews
- 1/2 small clove garlic, minced
- 1 Tbsp. sliced green onion
Directions

1Sprinkle cornstarch over chicken; add soy sauce and let marinate for 15 minutes.

2Heat 1 1/2 teaspoons oil; brown chicken and remove from skillet.

3In same skillet, heat remaining oil; add onion and cashews and stir-fry until onion is tender.

4Add mushrooms and garlic; stir-fry for 1 minute.

5Return chicken to skillet; add water chestnuts and reserved liquid.

6Cover and cook until heated through, one to two minutes.

7Serve sprinkled with green onion.
