- 1 1/2 lb. red snapper fillets
- 3/4 c. flour
- 3 1/2 Tbsp. butter
- 6 oz. green chili sauce
- 12 oz. grated Monterey Jack cheese
- 6 oz. grated Cheddar cheese
- 2 Tbsp. minced parsley
- salt and freshly ground pepper
Directions

1Preheat oven to 350°.

2Coat fillets with flour, seasoned with salt and pepper to taste.

3Heat butter in medium skillet and lightly saute fillets on both sides, two at a time, adding more butter as needed.

4Place fillets in individual casserole dishes. Divide sauce and then cheese among them.

5Bake about 12 minutes. Sprinkle with parsley.
