  • 2 lb. spinach, washed and stems removed
  • 1/2 c. olive oil
  • 1 glove chopped garlic
  • 1/4 c. pine nuts
  • 1/2 c. raisins

Directions

    Blanch spinach; squeeze out water and chop.

    Heat olive oil. Add garlic, pine nuts and raisins.

    Season with salt and pepper. Cook on low heat for 5 to 10 minutes.
