- 1/4 c. grated carrots
- 1/4 c. chopped green onions
- 2 Tbsp. margarine
- 1/2 c. fish fry mix
- 1/2 c. cornbread mix
- 1 tsp. baking powder
- 1 tsp. Creole seasonings
- 1/4 tsp. black pepper
- 1/3 c. milk
- 1 egg, separated
- 1/4 to 1/2 tsp. hot sauce
- 1 c. cooked rice
- 1/2 lb. catfish fillets, cooked
- 1 Tbsp. vegetable oil
Directions

1Cook carrots and onions in butter; set aside.

2Combine fish fry mix, cornbread mix, baking powder, Creole seasonings and black pepper in large bowl.

3Blend milk with egg yolk and hot sauce. Stir rice, fish, carrot mixture and milk mixture into dry ingredients.

4Beat egg white until stiff; fold in beaten egg white.
