Catfish Gumbo

- 1 lb. catfish fillets, cubed
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 2 medium garlic cloves, finely chopped
- 2 Tbsp. vegetable oil
- 2 c. chicken broth
- 1 (14 1/2 oz.) can whole tomatoes, undrained
- 1 (10 oz.) pkg. frozen sliced okra
- 1/4 tsp. crushed red pepper
- 1 tsp. gumbo file
- salt and pepper to taste
- 1 1/2 c. hot rice
Directions

1Cook celery, green pepper, onion and garlic in vegetable oil in Dutch oven until tender.

2Add broth, tomatoes, okra, crushed red pepper, gumbo file, salt and pepper.

3Cover and simmer 20 minutes. Place fish on vegetables.

4Cover and simmer 15 minutes longer or until fish flakes easily when tested.

5Serve with hot cooked rice. Makes 6 servings.
