Ingredients

  • 1 basket ripe tomatoes
  • 3 large green peppers
  • 6 large onions
  • 1/3 c. salt
  • 3 c. vinegar
  • 1 qt. sugar
  • 1 1/2 Tbsp. horseradish
  • 1/2 tsp. red pepper
  • 1/2 box pickle spice

    Cut the tomatoes, peppers and onions.

    Cook with salt and strain.

    Pour mixture into a bag; let drain 3 hours.

    Save 1 cup of juice.

    In large boiler, add the vinegar, 1 cup strained juice, sugar and horseradish.

    Add spice bag made up of the red pepper and pickle spice.

    Cook everything 30 to 40 minutes.

    Put into hot, sterilized jars (open kettle).
