Cauliflower Bake

Ingredients

  • 1 lg. cauliflower, cut into flowerets
  • 1/2 tsp. salt
  • 3 c. water
  • 1/4 c. butter or margarine, melted
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. buttery cracker crumbs
  • 1 1/2 c. shredded Cheddar cheese, divided
  • 1 med. onion, chopped
  • 1/2 c. green pepper, chopped
  • 1 (16 oz.) can tomatoes, chopped and undrained

Directions

    Combine first 3 ingredients in a large saucepan, bring to a boil.

    Cover, reduce heat and cook for 5 minutes or until tender. Drain and set aside.

    Combine butter and next 4 ingredients in a large bowl, stir in cauliflower, 1 cup cheese, onion, chopped green pepper and tomatoes.

    Spoon into a greased 13x9x2 inch baking dish.

    Bake at 350° for 35 minutes.

    Add remaining 1/2 cup cheese and bake 5 additional minutes.
