Cauliflower Casserole

  • 1 large head cauliflower
  • 1 1/2 Tbsp. lemon juice
  • 1 (4 oz.) can mushrooms, drained
  • 1 green pepper, chopped
  • 3 Tbsp. butter
  • 3 c. thick white sauce
  • 1 (8 1/2 oz.) can tiny green peas, drained
  • dash of red pepper and Worcestershire sauce
  • 1 (8 oz.) pkg. pimiento cheese
  • paprika

Directions

    Cook cauliflower in salted water with lemon juice until tender; drain.

    Saute mushrooms and green pepper in butter. Combine white sauce, peas, red pepper, Worcestershire sauce and half of cheese.

    Add cauliflower, mushrooms and green pepper. Pour into 1 1/2-quart casserole.

    Top with remaining cheese. Sprinkle with paprika.

    Bake at 350° for 25 minutes or until lightly brown.
