  • 1 lb. fresh mushrooms, sliced
  • 1 onion, chopped
  • butter
  • juice of 1 lemon
  • 1 large head cauliflower flowerets
  • garlic
  • basil
  • salt and pepper
  • 3 c. cooked brown rice
  • 2 1/2 c. grated Cheddar cheese

Directions

    Saute mushrooms and onion in butter with juice of 1 lemon. Saute cauliflower flowerets in butter with garlic, basil, salt and pepper to taste.

    Mix all ingredients, put in greased casserole. Cover and bake at 350° for 30 minutes.
