Cauliflower Soup

- 4 cups cauliflower, coarsely chopped
- 1 tablespoon extra virgin olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 3 cups chicken stock
- 1/2 cup parmesan cheese, finely grated
- salt & freshly ground black pepper (to taste)
Directions

1Heat oil in pot on medium heat.

2Add onion and garlic and saute until soft.

3Add cauliflower and chicken stock. Cook the cauliflower until it is tender, about 15 minutes.

4Using a hand blender, puree cauliflower until it reaches desired consistency.

5Add parmesan, salt, and peper.
