- 1 tbsp butter
- 1 onion, finely diced
- 3 garlic cloves
- 500 ml chicken broth
- 900 grams Cauliflower florets
- 400 ml Half-and-Half
- 1/2 tsp mustard
- 150 grams Pepper Jack Cheese
- 1 parmesan cheese
Directions

1In a large skillet, melt butter over medium heat.

2Add onion, and cook until soft, about 3-5 minutes.

3Add garlic, and cook, stirring frequently for about 30 seconds

4Pour in chicken broth

5Add cauliflower and cover skillet

6Let the cauliflower stem until fork-tender for about 20 minutes.

7Carefully and cauliflower and broth mixture to a blender

8Blanc until smooth

9Season with salt and pepper

10Stir in shredded cheeses until it melts

11Garnish with a pinch of shredded Parmesan cheeses, if desired
