- 8 medium potatoes
- 3 Tbsp. lemon juice
- 1/2 c. vegetable oil
- 1 onion, chopped
- 2 sliced tomatoes
- 1 Tbsp. ground hot pepper
Directions

1Boil potatoes and mash well.

2Add lemon juice, oil, salt and hot pepper.

3Place a layer of mixture in bottom of serving dish. Saute onion and spread over potato mixture.

4May add other cooked, chopped fine vegetables.

5Cover with second layer of potatoes. Sprinkle with grated cheese (optional).

6Garnish with olives, sliced hard-boiled eggs and serve on lettuce.
