- 1 1/2 lb. red potatoes, diced
- 1 tsp. cayenne
- 2 tsp. dried tarragon
- 3 scallions, sliced thin

2Saute potatoes 20 to 25 minutes, or until golden brown.

3Stir in cayenne, tarragon, scallions, salt and pepper; toss to coat potatoes well.
