Celery Casserole

Ingredients
- 1 bunch celery
- 1 medium onion, chopped
- 2 Tbsp. diced pimento
- 1 can water chestnuts, sliced
- 1 can mushroom or chicken soup
- 1/2 soup can milk
- 1/2 c. Ritz crackers, crumbled
- 3 Tbsp. margarine, melted
- salt and pepper to taste
Directions

1Prepare celery stalks by removing strings.

2Cut in 1/2-inch slices.

3Add chopped onion and cook until just tender.

4Drain. Stir in drained water chestnuts and pimento.

5Dilute soup with milk and add to mixture.

6Salt and pepper to taste.

7Pour into buttered casserole.

8Toss cracker crumbs with melted butter. Sprinkle on top.

9Bake 30 minutes in 350° oven.
