Celery Casserole

Ingredients

  • 1 bunch celery
  • 1 medium onion, chopped
  • 2 Tbsp. diced pimento
  • 1 can water chestnuts, sliced
  • 1 can mushroom or chicken soup
  • 1/2 soup can milk
  • 1/2 c. Ritz crackers, crumbled
  • 3 Tbsp. margarine, melted
  • salt and pepper to taste

Directions

    Prepare celery stalks by removing strings.

    Cut in 1/2-inch slices.

    Add chopped onion and cook until just tender.

    Drain. Stir in drained water chestnuts and pimento.

    Dilute soup with milk and add to mixture.

    Salt and pepper to taste.

    Pour into buttered casserole.

    Toss cracker crumbs with melted butter. Sprinkle on top.

    Bake 30 minutes in 350° oven.
